Cut Cheese. Made in the Extremadura region of Spain, semi-firm Ibores has a beautiful ruddy rind, the color coming from a generous rubbing of paprika during aging. Delightfully complex, yet not strong or "goaty," it has a toasty, savory flavor with a pronounced zing on the finish. One of the best reasons to love artisan-made aged goat cheeses.
